Tools If you read around this site long enough, you’ll realize that I enjoy cooking. Most of the time, I prefer to cook the protein or main course. With that comes the job of slicing that turkey, steak or roast. To do this well, I find that I need knives that are very sharp. From the ones that sharpen the knife as you pull it out of its little case, to the type with two mini steels that you pull the blade through and all sorts of other ones. I’m sure a sharpening steel works, but I don’t have the knowledge to do that correctly; ditto for a sharpening stone. I need something that’s easier than that–more foolproof.A few years ago, I found the best knife sharpener, so I picked one up to try it. This is a nicely built unit that is made in the USA. There’s an excellent video that comes with the unit, and it shows you step by step how to sharpen your knives. A very clear and concise instruction manual and two of each grit belt (for a total of six). I find I sharpen my knives once or twice a year around some holiday just before I had to carve a turkey and who knows what else. The Work Sharp Knife and Tool Sharpener is very simple and yet produces great results. About a year ago I noticed a new knife sharpener from Work Sharp it’s called the Work Sharp Ken Onion Edition Knife Sharpener. The Ken Onion Edition has a larger variable speed motor, premium ¾” belts and adjustable angle guides. These angle guides will allow you to sharpen a wider variety of blades. Ken Onion is one of the leading knife designers in the world today. There are some things about the Ken Onion Edition that I really like over the original knife sharpener. The variable speed and the variable angles let you sharpen more knife blades. The Ken Onion Edition allows you to attach a blade grinder (additional purchase). Which get into all sorts of things that I don’t do with my knife sharpeners. This attachment will allow you to custom shape sharpen and hone your blades, but again I don’t use it.For everyday use, if you’re just sharpening kitchen knives I don’t think the extra money buys you any added benefits, so in that instance, I would stick with the Work Sharp Knife and Tool Sharpener. But you absolutely cannot go wrong with either model. I have used this unit for about three years, and I’m still using the belts that came with it. The unit is just as easy to use by a left or right-handed person The plug supplied is for 110 voltage.Let me tell you things I like about this company. Work Sharp is a division of Darex, they are a family-owned company located in Ashland, Oregon. Products are made in the good old USA. I like that. So a few months back I was sharpening some knives, and I don’t know how I did it but I knocked the knife sharpener off my bench and it fell on the floor. A little piece of the upper pulley cracked, so I took some pictures of it, and I contacted their support, inquiring as to whether I can buy that part. They told me I could not buy that part by itself but they sold the front cassette, and they quoted me a price for it which was very reasonable. The customer support representative then asked me to take a picture of the bottom of the unit where the serial number tag is. I took the picture sent it to him and he said that they would be happy to send me that cassette at no charge as a warranty item. You’ve got to love a company that makes a product that does exactly what it’s supposed to do, and does it easily and stands behind their product. I understand Work Sharp has a new knife sharpener, called the Combo Knife Sharpener which is a little bit less money than the Knife and Tool Sharpener.
